Buon compleanno nonno Piero

Questa torta fa parte della tradizione della nostra famiglia.
Abbiamo iniziato a degustarla in una famosa pasticceria della città in cui viviamo,  fino a che non ci siamo cimentate nell'impresa di riprodurla fedelmente nella nostra cucina.
È la preferita di nonno Piero e, con piacere, la proponiamo in occasione del suo 78° compleanno.

INGREDIENTI
albumi 5
zucchero 300 g + 30 g per panna
Sale un pizzico
Limone 3 gocce
Aroma arancia 2 gocce
Panna montata 1.5 l



PROCEDIMENTO

Mettere gli albumi in una terrina aggiungendoci un pizzico di sale. Con le fruste montateli a  neve aggiungendovi due gocce di limone e gradatamente lo zucchero e , quasi alla fine, le due gocce di aroma.

Otterrete un composto fermo che stenderete in due teglie da forno formando due strati identici.  Questi rappresenteranno la base e lo strato superiore della torta.

Far cuocere in forno ventilato a 90°C per circa due ore, abbassare a 80° C è procedere con la cottura finché la meringa non si sarà asciugata completamente.

Togliere dal forno, far raffreddare e iniziare a comporre la torta.
Montare la panna aggiungendo in modo graduale lo zucchero.
Stendere sul primo strato di meringa una parte di panna montata livella di la con una spatola.
Porre il secondo strato di meringa e con una sac a poche guarnire ricoprendo con tanti piccoli ciuffetti.

Utilizzare l'eventuale meringa avanzata sbriciolandola e decorando i bordi della torta.

This cake is part of the tradition of our family. We started to taste it in a famous bakery in the city we live in, until we've been working hard to reproduce it faithfully in our kitchen. INGREDIENTS

Egg whites 5
Sugar 300 g + 30 g for cream
Salt a pinch
Lemon 3 drops
Orange aroma 2 drops
Whipped cream 1.5 l

METHOD

Put the white of the eggs in a bowl adding a pinch of salt. With the whiskers mount them to snow adding two drops of lemon and gradually the sugar ;almost in the end, add the two drops of aroma.

You will get a firm mixture that you will lay in two baking trays forming two identical layers. These will represent the base and top layer of the cake.

Cook in a 90 ° C oven for about two hours, lower it to 80 ° C and cook until the meringue has dried completely.

Remove from the oven, let it cool and start compiling the cake.
Fit the cream by gradually adding sugar. Spread on the first layer of meringue a piece of whipped cream with a spatula.
Place the second layer of meringue and with a sac garnish covering with many small tufts.

Use any remaining meringue by crumbling it  and decorate the edges of the cake.
